Recipe: Sunflower Butter Truffles

SUNFLOWER BUTTER TRUFFLES
 
Feeling like you're in the mood for a sweet treat but don't want all the extra guilt? Try these fudgy, creamy, delicious truffles.  Sugar, dairy, and gluten free you can indulge without feeling heavy or regret them after. Paleo-friendly as well, these are a great treat to bring to a party or just have for yourself. 
 
RECIPE FILLING:
1/2 cup sunflower butter
3/4 cup almond meal
1 tbsp raw honey
2 tbsp melted coconut oil
1/2 tsp cinnamon
1/2 tsp ashwaganda (Ayurvedic rejuvenating herb)
1 tsp vanilla extract
 
CHOCOLATE:
3 tbsp coconut oil
1 tbsp + 2 tsp cacao powder
1 tbsp + 2 tsp maple syrup

METHOD:
For the filling, simply mix together all ingredients until incorporated. Then, pop in the freezer for 45 minutes.

While the filling is close to being done chilling in the freezer, mix together your ingredients for the chocolate. Work quickly so the coconut oil does not harden while you are still working.

Take your filling out of the freezer and start rolling 1 inch balls. Put the balls into the chocolate and coat with two forks. Next, place balls on a cookie sheet lined with parchment paper so they don't stick. When you are done forming all the truffles, keep in refrigerator to keep from melting. Makes about 12 truffles. 
(Optional: sprinkle shredded coconut on truffles before chocolate has hardened)
